this is the first harvest of the swiss chard! it was delicious.

So this was a hodgepodge of recipes one half tofu marinade, a dash of cast-iron-stir-fry and a sprinkle of stefka magic. as you can see the mr. was quite happy too. It was DELICIOUS! neverhomemakers marinated tofu is the best we’ve had. We use agave (and very little of it) instead of sugar.

what i used:
2 old zucchinis that needed to be eaten
1 old carrot that needed to be eaten
1 old head of broccoli that needed to be eaten
1 half of an old red pepper
1 small yellow onion (not old)
fresh crushed garlic to taste
sprinkle of salt and pepper

this time i did it ‘wild style’ to try and save on dish washing.
‘wild style’ means you sauté the veggies together in one pan with the tofu and cook at different times.
once they are nicely sautéed push them to the side of the pan and and add the tofu to the center.
put the lid on it and let it cook. check back every couple of minutes and turn the tofu around to make sure it’s evenly cooked.
i do this for about 5 – 8 minutes, Mix it all up and serve nice n’ hot!
(I also garnish it with julienned basil and peanuts on top).

Big “lemon/orange” thing.
Anybody know what these are called?
It’s as big as a grapefruit maybe bigger. Looks like a lemon on the inside and tastes like an orange.

oatmeal sure is ugly.

BUT it sure is cute when your husband makes it for you every morning and puts a heart made out of out raisins on top.

it will be tomato season before you know it! i for one can’t wait. this is how my dad (JB) insulates his tomato plants when needed.

boil any kind of pasta you like (i like bulky pasta not stringy pasta).
in food processor blend: 28 oz of stewed tomatoes, garlic, basil, salt & pepper.
in pot add the tomato mixture to feta and romano cheese let it stew for a bit. add cooked pasta, mix together and serve HOT.

husband’s “crazy” cucumber salad:
cucumbers, tomatoes, basil, feta & red onion. shake that s@$# up put it in an awesome bowl and eat it!

red onions, chives, red cabbage, bit of olive oil, garlic, rocket, tomatoes, dill, sliced almonds
add a slice of cheese and serve on whole wheat toast. delicious!
